Happy Birthday, Skelekitty!

And it's that time again when our dear Skelekitty gets to eat cake, to blow out one more candle and to grow another inches or two... well maybe not the last one, but it's time to celebrate her birthday so let's all cheer for her to have a great day!

Actually, since she's living in Australia, she's already been celebrating it for about 16 hours ^^'

Chocolate cake recipe
250 g (8 oz) Chocolate (Dark or Semisweet) chopped
125 ml (1/2 cup) butter
250 ml (1 cup) boiling water
3 eggs
500 ml (2 cups) sugar
10 ml (2 teaspoons) vanilla extract
125 ml (1/2 cup) sour cream (or yogurt)
5 ml (1 teaspoon) baking soda
500 ml (2 cups) flour
125 ml (1/2 cup) cocoa powder
7 ml (1 1/2 tea spoon) baking powder
pinch of salt

Ganache (Icing)
125 ml (1/2 cup) whipping cream (35% heavy cream type, not whipped cream)
180 g (6 oz) semisweet chocolate

- Preheat oven at 350 F (180 C)
- Butter a tube pan and dust floor inside to cover all the bottom and side of the pan.

- Melt the 2/3 of the chocolate and the butter in a bain-marie (double boiler).
When it's melted, add the boiling water, mix and set aside. (1)

- In another big bowl, mix together the eggs, sugar and vanilla extract. Set aside. (2)

- In another bowl, mix together the baking soda and the sour cream (or yogurt).
Set aside and wait 5-10 mins to let it foam. (3)

- In yet another big bowl, mix together the flour, cocoa powder, baking powder and salt. Set aside. (4)

- Now mix together the eggs/sugar mix (2) with the chocolate. (1)

- Pour that mix over the flour/cocoa mix (4) and mix well.

- Add in the foamy sour cream mix (3) and the rest of the chocolate and mix well.

- Pour the mixture into the tube pan and cook for 50 mins or so.
Put a toothpick or knife in the center of cake, if it come out dry, the cake is cooked.
Let it cool down and release it.

For the ganache (icing),
put the cream to boil in a pan. When it's boiling, set aside and add in the chocolate and mix until the chocolate is melted. You can add a little bit of butter to make it shiny.
Let it cool down to room temperature.

When the cake and ganache are cooled down, pour the ganache over the cake and let it set. If the ganache is too hard to pour, you can put it 15-20 secs in the microwave. Let the ganache set and eat!!!

I actually used a meringue (egg whites with sugar) instead of a ganache. Yeah, weird idea, but I was out of chocolate and cream so... lol

it's not bad tho.
