Carrots and Parsnips Cake with Cream Cheese Icing

2 1/2 cups (635 mL) all-purpose four
2 tsp (10 g) baking powder
1 tsp (5 g) cinnamon
1/2 tsp (3 g) nutmeg
1/2 tsp (3 g) cardamom
1/2 tsp (2 g) salt
1/2 cup (125 mL) vegetable oil
2 cups (450 g) sugar
4 eggs
1 tsp (5 g) baking soda
1/2 cup (125 mL) plain or vanilla yogurt
1 tsp (5 ml) vanilla extract
3 cups (750 mL) carrot, grated
1 cup (250 mL) parsnip, grated

[Optional: You can add a cup (250 mL) of a mix of nuts and dried fruits]

Cream cheese icing:
2 1/2 cups (375 g) icing sugar
1/2 cup (112 g) softened butter
1 package (250 g) Philadelphia cream cheese
1 tsp (5 mL) vanilla extract
1 tsp (5 mL) lemon/lime zest

[Optional: You can add crushed nuts on top of the icing.]

1. Cake: Preheat the oven to 350 F (180 C).
2. Combine the flour, baking powder, spices and salt in a medium bowl.
3. Combine the baking soda with the yogurt in another bowl, mix well and let foam.
4. In a large bowl, combine the oil, sugar, eggs and vanilla.
5. Add the dry ingredients to the wet ingredients.
6. Add the yogurt mix and the grated carrots/parsnips.
7. Pour into a cake pan up to 1/2 - 2/3 height. You might have enough for 2 cakes.
8. Place in the oven and bake for approximately 50 minutes.

1. Cream cheese icing: Whisk the butter and cream cheese.
2. Gradually add the icing sugar and the vanilla and zests and whisk until creamy.

Note: You can change the recipe around if you want, for example:
Use only carrots or only parsnips in the cake, just make sure you have 3-4 cups.
(Parsnips taste really good by the way, kinda like carrots and sweet turnips.)
Add crushed hazelnuts or walnuts, raisins and dried fruits, ginger and lemon and lime zests into either the cake, the icing or on top of icing.
For a healthier cake, use 1/2 cup (125 mL) of apple sauce instead of the oil, soy yogurt, half the sugar and top the cake with icing sugar instead of the cream cheese icing.
You can also use any kind of yogurt you want or even use sour cream; taste will change tho :P
